Tekken Tag: This game has amazing music, cool stages, and great overall game design. It's just plain fun, and very dramatic. Plus, it's a Y2K classic.
Soulcalibur 2: This game has amazing music, free movement, and console exclusives like Heihachi, Spawn, and Link. It's aged very well and has a great single player mode.
Marvel vs Capcom 2: This game has a massive roster, is big fun, and has so many team combinations. The gameplay is deep, but easy to play, and it's aged really well.
Soulblade: This game has amazing music, is very stylish, and has a Hong Kong Kung Fu film feel. The characters and stages are beautiful, and it has two unique OSTs. It's the first appearance of Cervantes, Li Long, and Hwang.
DOA 4: This game has some of the best stages ever, a 4 player Tag team mode, cool online lobbies, and fast combat. It's aged really well.

Tekken 7: This game is THE Tekken entry to the series, and has carried the FGC for like a decade.
Soulcalibur 4: Star Wars, The Apprentice, and really good music and stages. The game looks so good that it could have come out today. It also features Algol.

Honorable Mentions: Mortal Kombat Deception, Street Fighter 3rd Strike, Street Fighter 4, Marvel vs Capcom 1, Marvel vs Capcom 3, and Tekken 3. And so many more!
Like i said, these are just my personal faves. Which ones did I miss?
For me, my undisputed #1 fighting game is Sega CD's Eternal Champions: Challenge From the Dark Side. The game is the best possible combination of Street Fighter 2 and Mortal Kombat. A lot of people wrote it off because the original Genesis version was a bit cheesy, a bit second rate. The Sega CD version, though, was an entirely new beast. The combat was outrageously fast and smooth, much more so than its famous counterparts. There were a huge number of special moves, and a vast array of hidden character and stage fatalities. In the era before internet, these were a constant joy to discover. Add to that, an entire lineup of bizarre and fun secret characters, the game kept you playing. Just when you thought you'd exhausted it, you'd go and discover another secret. Maybe a new special move, a new character, a new stage.
